<h4 style="text-align:left;"><span style="color:#008000;">Baccalà già ammollato</span></h4>
<h4 style="text-align:left;"><span style="color:#008000;">Pomodoro passato</span></h4>
<h4 style="text-align:left;"><span style="color:#008000;">sedano e cipolla</span></h4>
<h4 style="text-align:left;"><span style="color:#008000;">olio extravergine di oliva</span></h4>
<h4 style="text-align:left;"><span style="color:#008000;">farina</span></h4>
<h4 style="text-align:left;"><span style="color:#008000;">olio per friggere</span></h4>
<p style="text-align:left;"><span style="color:#008000;">Tagliare il baccalà a pezzetti, infarinarlo e friggerlo. Tritare sedano e cipolla e soffriggerli nell&#8217;olio. Quando sono appassiti aggiungere la passata di pomodoro, un pizzico di sale e portare a cottura. Quando il sughetto è pronto aggiungere il baccalà, un po&#8217; di acqua calda e far insaporire.</span></p>
<p style="text-align:left;">Per una ricetta più leggera infarinare i pezzetti di baccalà e aggiungerli al sughetto senza friggerli.</p>

<h4 style="text-align:left;"><span style="color:#0000ff;">2 zucchine</span></h4>
<h4 style="text-align:left;"><span style="color:#0000ff;">2 carote</span></h4>
<h4 style="text-align:left;"><span style="color:#0000ff;">2 patate</span></h4>
<h4 style="text-align:left;"><span style="color:#0000ff;">1 cipolla</span></h4>
<h4 style="text-align:left;"><span style="color:#0000ff;">1 costa di sedano</span></h4>
<h4 style="text-align:left;"><span style="color:#0000ff;">4 cucchiai di passata di pomodoro</span></h4>
<h4 style="text-align:left;"><span style="color:#0000ff;">4 foglie di cavolo nero toscano</span></h4>
<h4 style="text-align:left;"><span style="color:#0000ff;">4 foglie di bieta</span></h4>
<h4 style="text-align:left;"><span style="color:#0000ff;">400 gr di cannellini (la metà passati)</span></h4>
<h4 style="text-align:left;"><span style="color:#0000ff;">olio extravergine di oliva</span></h4>
<h4 style="text-align:left;"><span style="color:#0000ff;">pane toscano raffermo o tostato</span></h4>
<h4 style="text-align:left;"><span style="color:#0000ff;">1 rametto di timo</span></h4>
<h4 style="text-align:left;"><span style="color:#0000ff;">brodo vegetale</span></h4>
<p style="text-align:left;"><span style="color:#0000ff;">Tritare la cipolla, il timo ed il sedano e farli rosolare con poco olio. Aggiungere la passata di pomodoro e tutte le verdure tagliate a dadini. Insaporire qualche minuto e aggiungere tanta acqua calda fino a coprire tutte le verdure. A metà cottura aggiungere i cannellini (io non ne avevo e così ho messo dei fagioli con l&#8217;occhio) interi e passati e continuare a far bollire. Prendere possibilmente una pentola di coccio larga e fare uno strato di pane, poi aggiungere alcuni mestoli di zuppa sufficienti a bagnare le fette. Continuare così per un altro strato, lasciandone un po&#8217; . Il giorno successivo ribollire la zuppa aggiungendo del brodo vegetale e il minestrone avanzato. Condire con parmigiano, olio a crudo ed una spolverata di pepe nero.</span></p>

<h4 style="text-align:left;"><span style="color:#800000;">1 spicchio di aglio</span></h4>
<h4 style="text-align:left;"><span style="color:#800000;">sale e pepe</span></h4>
<h4 style="text-align:left;"><span style="color:#800000;">1 rametto di rosmarino</span></h4>
<h4 style="text-align:left;"><span style="color:#800000;">vino bianco</span></h4>
<h4 style="text-align:left;"><span style="color:#800000;">olio extravergine di oliva</span></h4>
<p style="text-align:left;"><span style="color:#800000;">Aprire le cosce di coniglio, riempirle con la salsiccia, salarle, peparle e legarle con spago da cucina. In un padellino mettere l&#8217;aglio ed il rosmarino con un po&#8217; di olio, aggiungere il coniglio e coprire. Quando il coniglio è quasi cotto aggiungere 1/2 bicchiere di vino bianco, sfumare e far rosolare le cosce . Servire con insalata mista, patate arrosto o cicoria ripassata in padella.</span></p>

<h4 style="text-align:left;"><span style="color:#008080;">Ingredienti per circa 400 cappelletti</span></h4>
<h4 style="text-align:left;"><span style="color:#008080;">1,400 kg di farina</span></h4>
<h4 style="text-align:left;"><span style="color:#008080;">14 uova</span></h4>
<h4 style="text-align:left;"><span style="color:#008080;">1 kg di impasto per cappelletti (vitello, maiale, prosciutto crudo)</span></h4>
<h4 style="text-align:left;"><span style="color:#008080;">2 tuorli di uovo</span></h4>
<h4 style="text-align:left;"><span style="color:#008080;">sale, noce moscata</span></h4>
<h4 style="text-align:left;"><span style="color:#008080;">formaggio grattugiato</span></h4>
<p style="text-align:left;"><span style="color:#008080;">Preparare la sfoglia impastando le uova con la farina. Lasciar riposare per una mezz&#8217;oretta. Nel frattempo condire l&#8217;impasto con 6 cucchiai di formaggio, noce moscata a piacere, un pizzico di sale ed i 2 tuorli d&#8217;uovo. A questo punto procedere con la preparazione dei cappelletti. Stendere la pasta in strisce non troppo sottili con la macchinetta. Distribuire dei mucchiettini di impasto, ripiegare la pasta su se stessa e tagliare delle mezze lune con una rotellina. Prendere le mezze lune, schiacciare leggermente i bordi e rigirarli tra le dita per chiuderle a cappelletto. Cuocere in un buon brodo di carne una quinidicina di cappelletti a persona. Gli altri possono essere congelati singolarmente distesi in vassoi e poi passati nei sacchetti.</span></p>

<h4 style="text-align:left;"><span style="color:#800080;">Pepe verde in salamoia</span></h4>
<h4 style="text-align:left;"><span style="color:#800080;">Panna liquida</span></h4>
<p style="text-align:left;"><span style="color:#800080;">Scottare in un padellino il petto d&#8217;anatra dalla parte della pelle finchè non è ben rosolata poi girare dall&#8217;altra parte e continuare la rosolatura, salando entrambi i lati. Aggiungere il pepe verde ed il cognac. Se vi piace una cottura al sangue appena è evaporato l&#8217;alcol togliete il petto dal fuoco, tagliatelo a fettine e tenetelo al caldo. Se lo preferite più cotto aggiungete acqua calda finchè dalla carne non uscirà più del liquido rossiccio. Quindi tagliare il petto e tenerlo in caldo. Aggiungere al sughetto della panna liquida (la mia non lo era, infatti la salsina è venuta più densa) e lasciar bollire qualche minuto. Servire le fettine di petto irrorate con il sughetto.</span></p>

<p><span style="color:#990033;">Condire l&#8217;arista con sale e pepe e rosolarla in un tegame con l&#8217;olio, l&#8217;aglio ed il rosmarino. Quando la carne ha assunto un colore uniforme in tutti i lati aggiungere un bicchiere di vino bianco ed il succo di una melagrana. Quando è quasi cotta aggiungere anche i chicchi dell&#8217;altra melagrana.   Lasciar cuocere finché l&#8217;arista non si buca bene con la forchetta, poi tagliarla a fette e condirla con il sughetto.</span></p>

<p>1 guscio di capasanta vuoto</p>
<p>barchetta di pasta brisee</p>
<p>Staccare la capasanta dal guscio e scottarla da ambo i lati in un padellino con poco olio, aglio e prezzemolo; poi  gratinarla con una panatura formata da pangrattato, parmigiano, aglio in polvere, prezzemolo ed un filo di olio.</p>
<p>Farcire le barchette con insalata russa.</p>
<p>Spalmare il crostino umbro su una fettina di pane.</p>
<p>Ritagliare due cuoricini di diverse grandezze da una fetta di pancarrè e farcire il più grande con la salsa ai sottaceti e maionese e il più piccolo con burro e uovo di lompo nere.</p>
<p>Adagiare un ciuffo di insalata sul guscio di capasanta e rifinire con una cucchiaiata di gamberetti in salsa rosa.</p>

<h4 style="text-align:left;">150 gr di tagliolini all&#8217;uovo</h4>
<h4 style="text-align:left;">1 peperone giallo</h4>
<h4 style="text-align:left;">2 filetti di acciughe</h4>
<h4 style="text-align:left;">pochi capperi</h4>
<h4 style="text-align:left;">olio extravergine di oliva</h4>
<h4 style="text-align:left;">1 spicchio di aglio</h4>
<h4 style="text-align:left;">1 rametto di rosmarino</h4>
<h4 style="text-align:left;">sale</h4>
<p style="text-align:left;">Pulire il peperone, tagliarlo a strisce e cuocerlo con 1 spicchio di aglio, l&#8217;olio ed un rametto di rosmarino, salando a metà cottura. Lessare i tagliolini al dente, frullare il peperone con i capperi e le acciughe e, con questa crema condire la pasta. Saltarla per pochi minuti e servire.</p>

<h4 style="text-align:left;"><span style="color:#0000ff;">4 sottilette di parmigiano</span></h4>
<h4 style="text-align:left;"><span style="color:#0000ff;">1 scalogno</span></h4>
<h4 style="text-align:left;"><span style="color:#0000ff;">1/2 bicchiere di vino bianco</span></h4>

<p style="text-align:left;"><span style="color:#0000ff;">Stendere le fettine su un tagliere, coprire con le sottilette tagliate a strisce e aggiungere l&#8217;uovo sodo. Arrotolare la fettina e fermare i bordi con degli stecchini. Soffriggere lo scalogno ed il rosmarino con l&#8217;olio fino alla doratura, aggiungere gli involtini, salare, pepare e rosolare bene la carne su tutti i lati. Sfumare con il vino bianco e terminare la cottura che sarà breve, dovendosi cuocere solo la fettina. Non preoccupatevi se uscirà il formaggio dagli involtini, ve lo ritroverete nel sughetto rendendo la scarpetta ancora più gustosa.</span></p>
